I had spent most of my Saturday morning cleaning and organizing my kitchen. As I was putting away the last tray in my newly organized fridge, I realized it was almost lunch time.
At once tired and hungry, I wanted a satisfying meal that does not take long to put together. Maharani Khichdi seemed like a great idea. To balance out the strong flavors I decided to add a cooling drink to go with it. And the Cardamom Honey Lassi was born. Piping hot Maharani Khichdi interspersed with the crunch of papad and sips of this liquid delight certainly made my day!
Here is the recipe. I hope you enjoy it as much as I did.
Ingredients
Greek yogurt 1 cup
Warm water 1/3 cup
Chilled water
Ice cubes 1 cup
Peeled Cardamom 1/4 tsp – lightly pounded to release the flavors.
Honey 3 tbsp.
Method
In a bowl combine honey, cardamom, and 4 tbsp. of warm water; Whisk until smooth and the honey and cardamom powder are properly combined.
In a jug, whisk the Greek yogurt to a smooth consistency. Add the honey- cardamom blend and ice cubes; Whisk until smooth.
Serve topped with a pinch of cardamom to garnish.
Using a whisk takes time and patience but it is worth the effort. Blending the Greek yogurt in an electric blender will break down the yogurt and make your lassi less thick.
